Our Beef

The source of beef is from the V-X Ranch and other local ranches in the area with traceability of each animal to birth. First, the live animals are delivered to the facility and inspected by a USDA Inspector, then processed under USDA standards. Once the carcasses have been chilled in the walk-in coolers, the mean is then cut off the bones and lean meat is mixed with trim from the beef out of the V-X Ranch Feedlot to make the perfect blend of ground beef.

Natural Beef

We The V-X Natural Beef Program begins at conception as cows are mated to sires selected for high value carcass traits. This enhances the retail value of the calves produced and the end product purchased by meat customers.

At birth calves are identified with an ear tag number recorded with the date of birth, sire, and dam. This information follows the individual animal from birth to processing. Every package is traceable back to birth.

"Dry Aged Beef"

After harvest, we allow our beef carcasses to age (chill) in our walk-in coolers for 12 to 14 days at 32 to 36 degrees before processing.  This dry aging procedure allows natural enzymes to naturally enhance muscle tenderness and increase flavor and juiciness.  Dry aging is common in most small processing plants, but impossible at traditional high-volume operations. You can taste the difference.

The Wood’s use the V-X brand as part of their labeling logo to emphasize locally grown, direct from the ranch quality meat products. When you buy V-X beef, you are buying locally grown beef “Direct from the Ranch.”  Generations of genetic selection for muscling, tenderness, and cutability makes our beef a better value.  Carcasses are “dry aged” to perfection, creating a delicious, nutritious, wholesome product with a higher percent of usable red meat.

We offer our beef to the consumer.  The consumer may come into the retail area of the meat plant to buy a variety of steaks, roasts, ground beef, etc.  We also have bundles available up to the ability for the consumer to purchase a quarter, half or whole V-X beef.
